Low key impressed myself with this recipe and the pics, and that drizzle will always impress 🥰 Ended up topping with some Greek yogurt mixed with cinnamon and stevia, and crushed pecans. Scroll to see the construction!





Recipe
(Waffles)
✰ 1/4 cup pumpkin purée
✰ 3 Tbsp egg whites (sub a flax egg)
✰ 1 Tbsp sweetener (I used monkfruit)
✰ 1/2 tsp vanilla extract
✰ 2 Tbsp milk (I used cashew)
✰ 2/3 scoop protein Level-1 Protein in Cinnamon Cookie Batter
✰ 1/4 cup cassava flour (sub oat, all purpose, GF, whole wheat, almond)
✰ 1/2 tsp pumpkin spice or cinnamon
✰ 1/2 tsp baking soda
✰ pinch salt
(Toppings)
✰ 1/4 cup 0% fat Greek yogurt, dash stevia and pumpkin spice
✰ 1 Tbsp almond butter
✰ sprinkle of crushed pecans
✰ sugar free syrup
1. Preheat waffle iron to med-high heat
2. Mix wet ingredients (pumpkin, egg whites, sweetener, vanilla, milk)
3. Whisk dry (protein, flour, baking soda, salt, spice)
4. Combine and pour into waffle iron.
5. Cool until golden and crispy
6. Top, if desired
