Almost burned my kitchen down while making these, but was still left wanting s’more 🍫🤩❤️ [PROTEIN FUDGY SMORES BROWNIES ~ 90 CAL]

These brownies may be my new fav thing I’ve made, but smores have always been a go to for me❤️ Be wary, though, that parchment paper usually catches fire if it comes in contact with the top of your oven (learned that the hard way). It did cause the marshmallow to get toasty so I’m not complaining too much hahah 🔥🔥
Recipe
(makes about 12 servings)
(For the graham cracker layer)
- 1 cup graham cracker crumbs (about 8 sheets)
- 1 Tbsp sweetener (I used monkfruit)
- 1/4 cup unsweetened applesauce
(For the brownie)
- 1/2 cup pumpkin
- 1/2 cup 0% fat Greek yogurt (I used fage)
- 1/3 cup granulated sweetener (I used monkfruit)
- 1 egg
- 1 egg white
- 1/2 cup dark cocoa powder
- 2 Tbsp coconut flour
- 1 scoop Level-1 Protein in German Chocolate Cake
- 1 tsp vanilla
- 1/4 tsp baking soda
(Topping)
- 3/4-1 cup marshmallows
1. Preheat oven to 350 F
2. Put graham crackers in blender until they become a powder and mix in Apple sauce and sweetener
3. Press onto baking sheet and bake for about 20 minutes (or until golden)
4. While cracker layer is baking, make brownie by combining wet + dry ingredients
5. After cracker layer is golden, pour in brownie mix and bake for 30 min
6. Cover brownie with marshmallows and bake for another 5 min or until marshmallows are golden
