Blueberry Protein Donuts (Vegan & GF)

If you’re feelin blue, donut worry I have a berry amazing recipe for you 💙 vegan & gf blueberry protein donuts comin your way (~60 cal per donut)

Been wanting to make more recipes like this for my vegan peeps out there and when I got the @youcanbeam blueberry muffin vegan protein was kinda shook by how good it was so I started thinking and this recipe was born 🤩 the donuts are sooo good and fluffy too, almost like the Dunkin’ Donuts blueberry cake donut 🍩 💙


✰ 1/4 cup applesauce
✰ 3/4 cup cashew milk
✰ 1/2 tsp vanilla
✰ 1/3 cup monkfruit
✰ 2/3 cup cassava flour (sub oat, GF, AP)
✰ 1 tbsp coconut flour
✰ 1 scoop (30g) vegan protein (I used @youcanbeam blueberry muffin)
✰ 1 tsp baking soda
✰ 1/2 tsp cinnamon (optional)
✰ pinch salt
✰ 1/2 cup blueberries (fresh or frozen)
✰ 3 tbsp powdered sugar (I used monkfruit)
✰ 1/2-1 tbsp cashew milk
1. Preheat oven to 350 F
2. Mix wet (applesauce, milk, vanilla, monkfruit) and dry (flour, protein, cinnamon, baking soda and salt)
3. Fold in blueberries.
4. Pour batter into donut pan and bake for 20 min or until toothpick comes out clean
5. Slowly add cashew milk into the powdered sugar until desired consistency for the glaze is reached.
6. Once donuts are cooled, remove from donut pan and dip donuts into the glaze.
7. Enjoy 🙂
*if you don’t have a donut pan you can totally make these into muffins :)*
