Oreo Brookies, or as I know them since middle school: “slutty brownies.” They are a true staple of my childhood and middle school years, and will always hold a very special place in my heart. I may love this protein version even more, though, and I think you will love it too ♥️

Recipe
(For cookie)
✰ 1/4 cup 0% Greek yogurt (sub applesauce)
✰ 2 tbsp applesauce
✰ 1 egg
✰ 1/3 cup granulated sweetener (I used monkfruit)
✰ 1/4 cup oat flour (AP, gf, almond, cassava flour)
✰ 2 Tbsp coconut flour
✰ 1 scoop Level-1 Protein in Vanilla Ice Cream
✰ pinch salt
✰ 1/2 tsp baking soda
✰ 2-3 tbsp chocolate chips
(8-10 Oreo thins)
(Brownie)
✰ 1/2 cup pumpkin purée
✰ 1/2 cup 0% fat Greek yogurt (I used fage)
✰ 1/3 cup granulated sweetener (I used monkfruit)
✰ 1 egg
✰ 1 tsp vanilla
✰ 1/2 cup dark cocoa powder
✰ 1 scoop Level-1 Protein in German Chocolate Cake
1. Preheat oven to 350 F
2. Mix ingredients for the cookie and press into the baking sheet.
3. Line oreos on top
4. Mix ingredients for brownie and pour on top of cookie and oreos.
5. Bake for about 30-35 min (do not over bake or they will lose fudginess)
*I used a loaf pan, if using regular brownie sheet, double measurements*
