Protein Snickerdoodle Cookies

Not making these would be a cookie mistake! Protein snickerdoodle cookies [~40 cal 3g protein] 🤤❣️

These cookies are pretty amazing. Was inspired by @1stphorm cinnamon cookie batter and made these 🤩 they’re actually some of the softest cookies I’ve ever eaten and the cinnamon flavor is fire 🔥

Recipe

(Cookie)
✰ 1/3 cup 0% Greek yogurt
✰ 1 egg (sub flax)
✰ 1/3 cup granulated sweetener (I used monkfruit)
✰ 1 tsp cinnamon
✰ 1/4 cup oat flour
✰ 3 Tbsp coconut flour
✰ 1 scoop level-1 protein in Cinnamon Cookie Batter
✰ 1/2 tsp baking soda
✰ pinch salt
(Cinnamon sugar mixture)
✰ 3 Tbsp monk fruit
✰ 2-3 tsp cinnamon

1. Preheat oven to 350 F
2. Mix wet (yogurt, egg, sweetener, vanilla) and dry (cinnamon, flour, protein, baking soda, salt) in a bowl
3. Scoop dough into balls and roll in sugar mixture
4. bake for about 8 min or until golden and brown
