Protein Mango Cake

Let’s (man)go 🥭🤩❣️ protein mango cake [~60 cal 5.6g protein] I didn’t know mango cake was possible until pretty recently but @beefy.bri gave me inspo and a made a protein version for my grandpas bday since he has a famous mango tree 😂 turned out sooo fudgy and chewy and the coconut frosting really is the frosting on the cake (pun intended)


✰ 1 cup crushed mango
✰ 1 egg
✰ 1/4 cup sweetener (I used monkfruit)
✰ 1 tsp vanilla
✰ 1/4 cup flour
✰ 2 tbsp coconut flour
✰ 1 scoop 1st phorm level-1 protein in vanilla ice cream
✰ 1 tsp baking soda
✰ salt
✰ 2/3 cup Greek yogurt
✰ 1 tsp coconut extract
✰ 1/4 cup sweetener (I used monkfruit)
✰ 1 tbsp coconut flour
1. Preheat oven to 350 F
2. Mix wet (mango, egg, vanilla and sweetener) with dry (flour, protein, baking soda, salt).
3. Pour into pan and bake for about 35-40 min (I used a medium loaf pan)
4. Mix frosting ingredients
5. Once cake cools frost and enjoy
