Protein Crumbl Cookies & Cream Cookies

These cookies make my heart crumbl ❣️ [~140 cal 20g protein] protein version of @crumblcookies cookies and cream 😉

I keep seeing crumbl cookies everywhere and this version looked wayyy tooo good not to try and recreate! So I made the cookies and when I was calculating the macros I was SHOCKED! The macros on these are better than any protein bar I’ve seen 👀 the protein i used def helped too cause it has actual cookie pieces in it so it’s PERF for this recipe 🥰🤍

✰ 1/2 cup pumpkin purée
✰ 1/2 cup 0% fat Greek yogurt (I used fage)
✰ 1/3 cup granulated sweetener (I used monkfruit)
✰ 1 egg
✰ 1 tsp vanilla
✰ 1/2 cup dark cocoa powder
✰ 1 scoop 1st Phorm Level-1 Protein in Ice Cream Sandwich
✰ 1/4 cup coconut flour
✰ pinch salt
✰ 1/2 tsp baking soda
✰ 1 1/4 cup 0% fat Greek yogurt
✰ 1 scoop 1st Phorm Level-1 Protein in Ice Cream Sandwich
✰ 3 tbsp powdered sugar (I used monkfruit)
✰ 1-2 tsp sf jello pudding mix (optional makes it thicker)
1. Preheat oven to 350 F
2. Mix wet (pumpkin, yogurt, sweetener, egg, vanilla) with dry (cocoa, flour, protein, baking soda and salt).
3. Bake cookies for about 10-12 min or until set.
4. Mix frosting ingredients.
5. Put frosting into piping bag and once cookies are cooled use bag to swirl frosting on top.
