These cookies must be todays date cause they’re a 10/10 🎃❣️ pumpkin protein cookies [~38 cal 3.5g protein] Pumpkin szn continues :)) I always use pumpkin in my recipes year round bc of the texture (makes everything sooo moist and fudgy and you really don’t taste it)! But now that’s you are supposed to taste it im going all out bc pumpkin spice anything is a blessing 🤗
Recipe
✰ 1/2 cup pumpkin purée
✰ 1 egg
✰ 1 tsp vanilla
✰ 1/3 cup sweetener (I used monkfruit)
✰ 1 tsp cinnamon
✰ 1/2 tsp pumpkin spice
✰ 1/4 cup oat flour
✰ 3 tbsp coconut flour
✰ 1 scoop 1stphorm level-1 protein in pumpkin spice latte
✰ 1/2 tsp baking soda
✰ pinch salt
✰ 2 tbsp @kakaozon choc chips (optional)
✰ sea salt (optional)
1. Mix wet (pumpkin, egg, sweetener) and dry (flour, protein, salt, baking soda).
2. Fold in chocolate chips and use cookie scoop to form balls.
3. Bake for about 8 min or until set.
4. Top with sea salt, if desired.
