After making the Mexican pizza, I had leftover enchilada sauce and that really got me craving enchiladas LOL! I also needed a meal ready to go for lunch since I started classes this week. Had them for lunch today and can confirm they’re just as fire the next day.
Highly recommend adding refried beans, greek yogurt (it’s like sour cream) and pico on top!

dEATs:
(Enchiladas)
✰ 12 oz chicken breast (I seasoned mine with onion powder, garlic powder, paprika, salt and pepper)
✰ 12 snack size low carb tortillas (I used xtreme wellness)
✰ 1/2 onion
✰ 1 cup fat free cheese
(Topping)
✰ 2 1/2 cup enchilada sauce
✰ 1 cup fat free cheese
1. Preheat oven to 375 F.
2. Season and cook chicken until internal temp is 165F
3. Cut onions (and use glasses or goggles for protection, if desired.)
4. Shred cooked chicken.
5. Add chicken, onion and cheese to tortillas and roll.
6. Add all rolls to a pan, cover with enchilada sauce and remaining cheese.
7. Add pan to oven for ~5-10 min or until cheese melts.
8. Add toppings of choice and enjoy!
