Protein Oreos? Piece of CAKEsters 🧁 [~120 cal 16g protein]

Im reposting these because I’m currently back on my cookies and cream kick and these are just incredible. They bring me back to my childhood but I honestly think they might be even better than the actual Oreos 🤫 So fudge and chewy AND protein packed 🤩❤️‍🔥 if y’all love the Oreo loaf you’re gonna love these!

Recipe:
(Cookies)
✰ 1/2 cup pumpkin purée
✰ 1/2 cup 0% fat Greek yogurt (I used fage)
✰ 1/3 cup granulated sweetener (I used monkfruit)
✰ 1 egg
✰ 1 tsp vanilla
✰ 1/2 cup dark cocoa powder
✰ 1 scoop 1st Phorm Level-1 Protein in Ice Cream Sandwich
✰ 3 tbsp coconut flour
✰ pinch salt
✰ 1/2 tsp baking soda
(Frosting)
✰ 1 cup 0% fat Greek yogurt
✰ 3 tbsp powdered sugar (I used monkfruit)
✰ 1-2 tsp sf jello pudding mix (optional makes it thicker)
1. Preheat oven to 350 F
2. Mix wet (pumpkin, yogurt, sweetener, egg, vanilla) with dry (cocoa, flour, protein, baking soda and salt).
3. Scoop cookies (ice cream scoop will Cheshire your life) and bake cookies for about 12 min or until set.
4. Mix frosting ingredients.
5. Place frosting on one cookie and sandwich with another.
