Pink Palmini Pasta

This pasta would def pair amazing with another protein like chicken! If you want to up the protein of this one highly recommend adding that in there!

✰ 1 pack Palmini linguine
✰ 2 large beets

✰ 1 cup nonfat cottage cheese

✰ garlic powder, onion powder, salt and pepper

✰ 1 oz goat cheese

✰ 1/3 cup milk (I used cashew )

✰ additional 1 oz goat cheese and parsley for topping

1. Cut beets, cover in foil and air fry on 400F for ~10 min or until soft.
2. Drain and rinse Palmini
3. Combine beets, cottage cheese, goat cheese, milk and spice in blender.
4. Add sauce into Palmini and combine.
5. Add additional 1 oz goat cheese and parsley to top.
6. Enjoy!

290 cals 12g fat 19g carb 25g protein
